Today’s Menu – January 6, 2009

Morning Snack

We were on the road this morning (another trip to Home Depot — hopefully the last!) so snack happened in the car.  It was snack mix:

1 fun-sized box of raisins
handful of multi-grain alphabet pretzels (PC product, perfect size for Sam and fun for Connor)
handful of corn bran squares cereal

mixed altogether in a snack size ziplock baggie. It’s portable and great because (1) it takes a while for Sam to eat it, so he’s quiet in the car and (2) if it spills, it’s all dry and very easy to clean up

Lunch

grilled cheese sandwiches with cut up veggies – cucumber and broccoli

Afternoon snack

detox tea
cut up broccoli & carrot sticks
roasted garlic hummus for dip

Okay – I admit. This was my snack. After school we’re going to be in the grocery store. So snack will probably be a muffin. Sam will have a fruit cup before we go to get Connor.

Dinner

Mexicali Chicken
rice
steamed broccolli (can you tell this is just about the only veg in the house right now??? lol…)

Today’s Menu: November 3, 2009

I am always out on the first Tuesday of the month.  It’s my monthly business meeting, and so the dinner plans for that night are either quick and simple (so my hubby can do it when he gets here), or are oven or crock-pot meals so that I can start them and and can take them out to serve them.  Today I have opted for quick and easy.  Here are our food plans for the day:

Morning snack

cheese cubes
grapes
crackers
(I confess: yesterday we did not do this for afternoon snack.  Instead we ate leftover jack-o-lantern cake.  YUM!!)

Lunch

Amanda’s broccoli & cauliflower soup
toast

Afternoon Snack

yogurt
granola bar

Dinner

pierogies – I get these from the frozen food section of the grocery store.  We love them fried up with some onion, peppers & mushrooms.  Make sure you put the pierogies in the pan first though — I cook them for 5 minutes, then turn them over and cover them with the veggies.  Cover and cook for another 5 minutes or so and voila — dinner is ready!  Serve with sour cream.

Today’s Menu: November 2, 2009

Morning Snack

Apple slices with peanut better

Lunch

Western Omelettes - spray a small frying pan with non-stick spray and heat on med-low.  Chop up 1/4 of a green pepper and slice 3 pre-cooked bacon sliced (leftover from homemade pizza night).  Add both to the pan to cook a little.  Meanwhile, beat 4 eggs with a fork.  Once the peppers & bacon are warm, pour the beaten eggs over them, stirring them up to mix the peppers and bacon in nicely.  Cover and cook until almost cooked through; flip the omelette carefully.  Turn the heat off and allow to sit in the pan for a minute so that the runny egg on the top (now the bottom) is cooked through.  Cut into pieces and serve with toast.

Afternoon snack

cheese cubes with crackers and grapes

Dinner

Pork chops - sprinkled with Clubhouse “Chicken and Rib” seasoning and pan fried with Diana’s Chicken & Rib barbecue sauce
Rice
Mediterranean broccoli
